In the late 1980’s Far north coast dairy co-operative Norco launched on an ambitious project to develop a product to cater for a growing consumer demand for products that fulfill their needs for health requirements in the one product. The town of Nimbin in the far north coast of NSW has a reputation for embracing the alternative. Norco selected the Nimbin name to champion this truly functional cheese.
After in depth research four key aspects were determined as most important in the minds of consumers:
- Reduced sodium
A blended form of potassium chloride and sodium chloride enabled cheese makers to achieve consumer expectation of reduced sodium salt, which is beneficial to those consumers who are conscience of their salt intake. - Reduced fat
The whole milk used in the product was standardised to reduce it by 17% to achieve a finished product that contains 10% less fat than standard cheddar cheese. - Improved Digestion
Lactobacillus Acidophilus is a bacterium that is widely researched and proven to assist in developing a healthy bacterial flora in the gut to aid digestion. Nimbin Cheese was the first in the Australian market to offer this concept to consumers. - Excellent Taste
Above all else consumers demanded good flavour and an enjoyable eating experience, to accommodate this Norco food technologists blended a selected range of cheese cultures that were able to impart a subtle aromatic flavours similar to swiss cheese.
Nimbin cheese has been a winner in the Australian market, winning awards such as the Sydney Royal Easter Show Gold Medal, and various product innovations awards. Like the name [Nimbin] implies is a true alternative for cheese connoisseurs who demand products with distinct flavours, with the added heath benefits.
